Master the Art of Italian Pasta

Pasta Studio Labs is an intensive Italian pasta course designed for those with culinary training who want to specialise in one of the most representative areas of Italian cuisine, as well as for passionate cooks eager to explore the extraordinary variety of Italian pasta and the stories behind it.

Through a unique combination of hands-on practice and theoretical learning, this course goes beyond simply preparing pasta: participants explore the different types of dough, shapes, fillings, and techniques that have shaped Italy's rich pasta tradition, while understanding how these preparations are connected to the culinary culture and regional identities of Italy.

The Study Programme

The Pasta Studio Labs professional pasta course consists of four weeks of study and includes 18 four-hour meetings, plus three extra activities, for a total of 80 hours.

The programme includes:

  • 16 theoretical and practical lessons
  • 3 free exercises, each followed by a photography session
  • 1 exam
  • A Welcome Dinner
  • A Pasta Tour
  • A Market Tour

Lessons take place every morning or afternoon, from Monday to Friday, and include a short break.

The programme explores the different techniques and preparations that form the rich world of Italian pasta. Students work with egg and non-egg pasta, doughs made with durum and soft wheat, filled and unfilled pasta, special unprocessed and drawn pasta, as well as different types of gnocchi.

Traditional condiments accompany the various preparations, allowing participants to explore classic combinations and discover the regional traditions connected to Italian pasta from North to South.

The three free exercises are an opportunity for students to put into practice the techniques and knowledge developed during the course. Each exercise is followed by a photography session, allowing participants to capture and document their creations.

Extra Activities

The programme also includes a series of activities to enrich the learning experience:

Welcome Dinner: a chance to meet other participants and instructors in an informal setting.

Market Tour: explore Florence's two main markets, learn about fresh ingredients and regional specialties, and get expert tips on how to select them.

Pasta Tour: take a closer look at pasta production in a professional setting for the restaurant and retail sectors.
