To Discover the True Essence of Italian Cuisine

Aroma Italia Labs is an immersive culinary experience designed for both professionals and enthusiasts eager to explore the foundational recipes, techniques, and cultural traditions of Italian gastronomy.

Through a unique blend of hands-on practice and cultural insight, this course goes beyond simple recipes: you'll learn to think about food the way Italians do at the table—deeply rooted in tradition and regional identity, and proud of their local products and specialties. Just like in an Italian family, participants will cook and enjoy the most iconic dishes of Italy, from North to South—the same ones found in a classic trattoria.

Course Structure

The program includes 15 lessons, each lasting 4 hours, enriched by 5 engaging activities such as tastings and food tours. The lessons are a mix of theory and practice, held in our state-of-the-art teaching kitchens. Students work both individually and in teams under the guidance of experienced instructors and chefs, preparing full menus and exploring traditional preparation and cooking methods.

The lessons focus on first courses, grain-based dishes that are the cornerstone of Mediterranean cuisine. Around these, menus are developed that provide opportunities to deepen skills in preparing and cooking vegetables, meat, and fish.

Alongside the classic full-menu lessons (appetizer, first course, second course, and dessert), other lessons dive into delicious topics like bread and pastry, as well as fish and fried foods. Special attention is given to vegetables, which brighten and enrich Italian tables.

  • Lesson 1: Oil, tomato, dried pasta, stews
  • Lesson 2: Sauté, dried pasta, basic condiments
  • Lesson 3: Egg pasta, butter, fats, minced meat
  • Lesson 4: Stocks, boiled meats, stuffed pasta
  • Lesson 5: Risotto, rice, tripe
  • Lesson 6: Soups, gnocchi and pestos, legumes, polenta, vegetables
  • Lesson 7: Pizza, cured meats, cheeses, sandwiches, gelato
  • Lesson 8: Italy in a Jar: preserves and specialties
  • Lesson 9: Northern Italy
  • Lesson 10: Central Italy
  • Lesson 11: Southern Italy
  • Lesson 12: Fried foods from North to South
  • Lesson 13: Along the coast: fish and seafood

  • Enrollment Deposit: A non-refundable deposit of €500 is required to reserve a spot.
  • Additional Payment: €1,000 due at least 1.5 months before the course starts.
  • Final Balance: To be paid one week before the beginning of the course.
