Professional Program of Italian Cooking

The Professional Program is structured according to parameters determined by the Gruppo di Filiera "Formazione Cucina Italiana" dell'Associazione "Assoknowledge" di Confindustria, of which the Scuola di Arte Culinaria has been a member since the associations inception.

The School of Culinary Arts Cordon Bleu based in Florence offers a professional programme delivered over an eight week theory period and four weeks of practical training in restaurants or other facilities in the food sector (five weeks for non EU citizens).

The eight week theoretical program includes 40 cooking lessons which will run every morning from 9:30 to 14:00 (or 9:00 to 13:30 or in a different way for a total number of 180 hours) with a short lunch break for the tastings. In the afternoon (or evening or early night) the students will be involved in other activities which include:
- 8 three-hour cooking lessons held by cooks and pastry makers
- 10 one-hour lessons on wine
- 3 excursions to producing firms in the food industry

The four week practical program follows immediately afterwards (five weeks for non EU citizens). The training practice will be done in facilities located in Florence or in the outskirts. How and when will be decided by each firm.

The cost of the professional program is 5,500.00 euro per person, which includes:
- 300 euro enrollment fee
- Lesson materials (recipe book, apron, uniform)
- Ingredients for the cooking lessons
- Insurance for the study sessions at the school and the practical training sessions off-site
- Guided excursions and transport

Accommodation is not included in the price; the school does not arrange accommodation but is on hand to help in looking for it.

The course is designed to form specialists in Italian cooking, culture and tradition. After the final exams the student will be able to work in the eno-gastronomy sector ranging from restaurants to publishing and teaching.

The programme focuses on the study of the basis of Italian and International cooking with theoretical and practical sessions.

During the morning sessions the students will familiarize themselves with the techniques of cooking and patisserie, and will master traditional Italian recipes.

The ten wine lessons are complementary to the cooking lessons, and the students will learn the techniques of wine tasting and food and wine-matching.

The eight lessons held by guest chefs will introduce the students to the world of professional gastronomy with its new and different working methods, different even from regional traditions.

During these lessons the students' ability to work in a team will also be assessed.
The guided tours will give the students an opportunity to learn about the production process of some typical Italian products.

The students will be informed of the afternoon and week-end programs at the beginning of each week.

The professional programme students are expected to be punctual, organized with their materials, and neat in appearance.

To qualify for the Certificate of Attendance to the professional programme the students must have:
- attended at least 80% of the lessons
- followed the terms agreed upon with the firm where the practical training session will be held

The lessons will be in Italian with help in English. The choice of firms for the practical training sessions will follow a chronological enrollment criteria. 10 is the maximum number of students.

PAYMENT CONDITIONS*

A student can reserve the place with a 300 euro enrollment fee and pay a deposit of 1,700.00 euro required upon registration within 2 months of the starting date of the course. In the event of cancellation after the last day the money already paid will not be refunded. On the contrary if the cancellation is before the last day we refund the deposit but not the enrollment fee. In the event of cancellation of the professional programme by the school, the deposit will be totally refunded.
