This course deals with the preparation of appetizers, first, and main course dishes, using crustaceans (shrimp, crabs, lobster), mollusks (clams, mussels) and fish.

FISH & SEAFOOD WITH CLAUDIO 1: Clean and Fillet
Sea bass fillet
Carpaccio di branzino
Linguine with red mullet and sea bass fillet with herb bread crumbs
Fillet of sea bass with zucchini
Fillet of gallinella in eggplant

FISH & SEAFOOD WITH CLAUDIO 2: OCTOPUS AND TUNA
Octopus salad
Polpette in tomato sauce
Layers of marinated tuna with rice vinegar
Tuna tartare with tomato
Pasta with fresh tuna and citrus pesto
Tuna salad

FISH & SEAFOOD WITH CLAUDIO 3:
Millefoglie (pastry dough) with anchovies, potatoes and zucchini
Anchovy tart
Rolled eggplant with couscous and shrimp
Fisherman's Risotto
Stuffed squid: capers and olives; radicchio tardivo Treviso

FISH & SEAFOOD WITH CLAUDIO 4:
Shrimps and prawns: raw, steamed, wrapped with bacon
Risotto with shrimp and cream of asparagus sauce
Cous Cous trapanisi (from Claudio, with a little Livorno)
